Kitchen Exhaust Duct Cleaning
What is Kitchen Exhaust Duct (KED) Cleaning?
Kitchen Exhaust Duct Cleaning is the process of removing grease and dust that gets accumulated inside the ducts, hoods, filters and oil collectors of exhaust systems of kitchens. If left uncleaned for too long, the grease piled up inside the exhaust duct systems could cause fire hazards. Exhaust duct systems must be inspected at regular intervals of time before a dangerous amount of grease has accumulated inside ducts.
Exhaust Duct Cleaning Procedure

The Kitchen Exhaust System consists of multiple components that require different cleaning procedures. Before any work is conducted, safety check is conducted on site and all working personnel are required to wear PPE throughout the KED cleaning procedure.
Step 1
The kitchen area will be covered with plastic protection sheets to prevent any residuals from damaging the kitchen appliances.

Step 2
A machine is placed in the exhaust duct to dislodge the build up grease and dirt inside. The machine consists of a rotating brush system to remove the build up grease and dirt, combined with an application of degreasing foam.

Step 3
A second layer of degreasing foam is applied using the machine to deeply penetrate the remaining grease. Once the foam has settled, a high-pressure rinse is performed to remove all residues.

Step 4
After completion of cleaning procedure, a thorough and comprehensive housekeeping of the area is carried out in order to maintain an orderly, clean, and presentable environment.

Exhaust Hood & Filter Cleaning Procedure

Step 1
After removing the filter from the hood, the cleaning process begins with the application of degreasing foam to break down grease and grime on the surfaces. Time will be set aside to ensures that the degreasing foam have time to penetrate and loosen the buildup.

Step 2
After allowing the foam to settle, manual scraping is performed to thoroughly remove any remaining grease deposits. Once scraping is completed, the surfaces are rinsed in high pressure to wash away all residues.

Step 3
After a final wipe down has been done on the filters and hoods, the filters will be placed back inside the hood

Daikin’s Post-KED Service Report

A comprehensive before-and-after cleaning report will be provided to the client for quality assurance and documentation. In addition, there will be a record of maintenance sticker placed on the kitchen exhaust hood. This is in compliance with SCDF Fire Code Clause 7.1.13d which state that records of cleaning and degreasing shall be kept by the owner/ operator for verification.
